carrot cake

1¾ cups all-purpose flour
½ cup sweetened shredded coconut
¼ cup wheat germ (optional—replace with ¼ cup flour if not using)
2 tsp baking powder
3 tsp ground cinnamon
1 tsp kosher salt
½ tsp baking soda
3 eggs
1 cup packed light brown sugar
1 cup canola oil, plus more for oiling pan
1 tbsp pure vanilla extract
2 cups finely grated carrots (about 3 medium carrots)
1 14-oz. (398-mL) can crushed pineapple, drained (1 cup)
½ cup chopped pecans


drizzly cream cheese icing
¼ cup shredded coconut
¼ cup low-fat cream cheese, softened
1 tbsp unsalted butter, softened
1 cup icing sugar, sifted
¼ tsp finely grated lime zest
1 tbsp lime juice or pineapple juice


Preheat oven to 350°F. Lightly oil a 10-inch bundt pan.
In a bowl, whisk first 7 ingredients together.
In another large bowl, whisk eggs and sugar together until smooth. Add oil and vanilla and mix until blended. Stir in carrots and pineapple. Add reserved dry ingredients and nuts and stir until just blended. Spoon evenly into prepared pan and smooth top.
Bake until toothpick inserted in centre comes out clean, about 45 minutes. Cool 10 minutes then invert onto cooling rack. Allow to cool before icing.
drizzly cream cheese icing
Preheat oven to 350°F. Spread coconut out on a cookie sheet and toast for 2 to 3 minutes, until light golden brown. Watch closely, as it burns quickly. Remove from oven and cool.
Cream butter and cream cheese together until smooth. Add icing sugar and blend. Add lime zest and juice and mix well. Drizzle over carrot cake and garnish with toasted coconut.


Making muffins? Cooking time is 25 minutes.

I LOVE this fabric line. I loved it when Basic Grey did it first in paper; I bought bunches of it for Christmas cards. And when Moda announced they were doing a fabric line, yummy!

I quilted this for Hamels last week. And if you are in the Saskatoon or Toronto areas, you can see it some upcoming quilt shows.



I am still debating about buying this kit. It's pricey but oh so pretty. Decisions decisions. My birthday is coming up ;)

surprise

Tonight is a surprise party for a special friend of mine. I was asked to do a quick card for everyone as a party favorite. I had an idea of what I wanted to do, of course once I started creating the card, something completely different came out lol.



This time that was a good thing; I really love how this card turned out. Hope everyone else likes it too.

two for one


I've had these panels laying around here for about 2 years. I finally took some time and quilted them up with my favorite meander panto. Now to get the bindings sewn down and I have two Christmas presents ready and waiting.

Today was Canadian Thanksgiving. Jim left Saturday for his annual hunting trip way up North and I had plans to spend the entire weekend attached to my sewing machine.

autumn orchard cake with cream cheese icing


cake

1¾ cups all-purpose flour
1¼ tsp baking powder
1 tsp ground cinnamon
¾ tsp baking soda
½ tsp kosher salt
¾ cup unsalted butter, softened
1 cup golden brown sugar, packed
2 eggs, room temperature
½ cup sour cream
1 tsp pure vanilla extract
2 Granny Smith apples, peeled, cored and coarsely grated (about 2 cups)

icing
1 package (250 g) cream cheese, softened
¼ cup unsalted butter, softened
¾ cup icing sugar
1 tsp fresh lemon juice
1 tsp vanilla extract
¼ tsp ground cinnamon

Preheat oven to 350˚F. Grease an 8-inch square pan and set aside.
Mix first five dry ingredients in a bowl. Set aside.
Using an electric mixer, cream butter and sugar until light and fluffy. One at a time, add eggs, mixing well after each addition. Stir in sour cream and vanilla. Add apples and mix well. Add reserved dry ingredients and mix. Spread batter evenly into prepared pan. Bake for about 35 minutes, until a toothpick inserted in centre comes out clean. Cool before removing from pan and cut into 2-inch squares.

Using an electric mixer, beat cream cheese on medium speed until smooth.
Add butter and continue to beat.
Reduce speed to low and add icing sugar, scraping sides as necessary.
Mix in remaining ingredients, continuing to beat until fluffy.

great tips
Try pears, sweetened cranberries or fresh blueberries instead of apple.
For single lunch-size servings, spoon batter into 12 greased muffin tins and bake for about 20 minutes.
