- 1/2 cup butter, softened
- 2/3 cup granulated sugar
- 3 large eggs
- 2 tsp. vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 cup strong coffee, chilled
Frosting
- 8 oz. Cream Cheese, softened
- 1/2 cup butter, softened
- 3 cups powdered sugar, sifted
- 1 1/2 tsp. coffee extract
- 1 tsp. vanilla extract
Instructions
- 1Preheat oven to 350°F.
- 2In the bowl of your stand mixer combine butter and sugar until fluffy.
- 3Once fluffy mix in eggs one at a time.
- 4Mix in vanilla.
- 5In a separate bowl sift together flour, baking powder and salt.
- 6With the mixer on low add in 1/3 of the flour mixture, 1/8 cup of coffee, another 1/3 of the flour mixture, the rest of the coffee, and the rest of the flour mixture.
- 7Don't over mix, mix until just combined.
- 8Fill 12 cupcake liners 2/3 of the way full with the batter.
- 9Bake for approximately 20 minutes or until cake springs back when touched.
- 10Allow to cool before frosting.
- 11For the frosting; In a large bowl cream together butter, cream cheese, vanilla and coffee extract.
- 12Once combined slowly mix in sifted powdered sugar.
- 13Mix until frosting is light and fluffy.
