Cinnamon Apple Bread Pudding



  • 1 L (4 cups) cubed whole grain bread(about 4 pieces)
  • 2 eggs
  • 2 egg whites
  • 175 mL (3/4 cup) unsweetened applesauce
  • 125 mL (1/2 cup) skim milk
  • 10 mL (2 tsp) ground cinnamon
  • 125 mL (1/2 cup) low fat vanilla yogurt
  • 1 small apple, cored and diced
  • Ground cinnamon (optional)
Directions
  1. Sprinkle bread in sprayed 2 L (8 inch) square baking dish; set aside.
  2. In bowl, whisk together eggs, egg whites, applesauce, milk and cinnamon. Pour over bread and press bread gently into egg mixture. Bake in 190°C (375°F) oven for 30 minutes or until golden, puffed and knife inserted in centre comes out clean.
  3. Serve each piece with dollop of yogurt, apple and sprinkling of cinnamon, if using.
