After brunch today, I had many requests for the recipes for the two goodies I brought. So here they are.
Cheese and Bacon Muffins
2cups flour
2tbsp white sugar
1tbsp baking powder
1/2 cup grated sharp cheddar cheese
4-5 bacon slices cooked and crumbled
1 egg
1 cup milk
1/4cup oil
Mix first 6 ingredients in large bowl. Make a well in the center.
In a small bowl, beat egg slightly. Mix in oil and milk. Pour into well; stir until moistened. Batter will be lumpy.
Fill greased muffin tins 3/4full. Bake at 400 for 20-25minutes.
Double Chocolate Cranberry Cookies
1 cup dried cranberries
2tbsp orange juice or orange liqueur
1 1/2cups flour
1/2cup cocoa
1/2tsp baking soda
3/4cup softened butter
3/4cup white sugar
1/2cup brown sugar
2 eggs
2tsp vanilla
1 cup semi-sweet chocolate chips
Preheat oven to 350
Place cranberries in small bowl and add orange juice. Microwave on medium until warm, roughly 90 seconds.
In large bowl, mix butter and sugars together. Beat in eggs and vanilla. Add flour, cocoa and baking soda. Add in cranberries and chocolate chips.
Bake at 350 until cookies edges are firm; roughly 10minutes.
