OREO Ice Cream Sandwiches


Ingredients

14 OREO Cookies, divided
6 Tbsp. vanilla ice cream, slightly softened

Directions
1 CHOP 2 of the cookies into small pieces; set aside. Spoon 1 Tbsp. of the ice cream onto each of 6 of the remaining cookies; top each with second cookie to make sandwich.
2 ROLL edges in chopped cookies. Place on waxed paper-covered baking sheet. Freeze 30 min. or until firm. Wrap individually in plastic wrap; store in freezer until ready to serve.
3 REMOVE from freezer 5 min. before serving. Let stand at room temperature to soften slightly.

Substitute
Try making these cool treats with your favourite Oreo Cookie. Try Mint Creme, Banana Split, Peanut Butter, GOLDEN or Strawberry Milkshake!

girl's weekend!




Did you miss me? lol. I left yesterday afternoon for the night with some girlfriends to one of their inlaws cabin. Four of us and we stuffed my 8-seater van full lol! We had a FANTASTIC time. I took all my stamps with me, except the Christmas ones-i should have taken a picture of the box lol.

I managed to make 19 cards, my goal was 10. We got in a few walks, had a surprise run in with a bear. We knew there was one in the area. We went to go for a walk Saturday night, turned onto the street and he was RIGHT THERE-talk about a panic moment! And no, the picture is not zoomed in lol

Berried Delight

Ingredients
1-1/2 cups Graham Crumbs
1/4 cup butter, melted
1 pkg. (250 g) Brick Cream Cheese, softened
2 Tbsp. cold milk
3 cups thawed Whipped Topping, divided
1 qt. (4 cups) strawberries, halved
3-1/2 cups cold milk
2 pkg. (4-serving size each) Vanilla Instant Pudding

Directions
1 MIX graham crumbs and butter in 13x9-inch pan; press firmly onto bottom of pan.
2 BEAT cream cheese and 2 Tbsp. milk in large bowl with wire whisk until well blended. Gently stir in 1-1/2 cups of the whipped topping; spread over crust. Top with strawberries; set aside. Pour 3-1/2 cups milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 min. or until well blended. Pour over strawberries.
3 REFRIGERATE at least 4 hours or overnight. Spread remaining 1-1/2 cups whipped topping over pudding just before serving before cutting into pieces to serve. Store any leftover dessert in refrigerator.

Jazz It Up
Garnish with additional sliced fresh strawberries just before serving.

Quick Chocolate Garnish

Drizzle with 2 Tbsp. hot fudge dessert topping just before serving.

After Jim's grandma passed away last month, we were offered their dining room set. We ended up moving furniture all around to get all the pieces in. One was/is a liquor cabinet. I didn't know what to put into it when I realized with our furniture moving, I has lost a quilt rack spot. Found a new use for the liquor cabinet. I have many more quilts in the drawer below as well

If someone had handed me these fabrics and told me to make a quilt, I would have laughed. But seeing them together, how lovely are they! The daisy fabrics make this quilt happen-great job Kathy!

I hate quilting.

This is mom's Mother's Day gift. It was a kit. The center panel was not cut square. I tried squaring it up and ended up making it smaller than it should have measured and as you can see, there is a loverly bubble in the center. I'm going to have to double batting the center before I quilt it and hopefully that will fix the bubble. I do not want to have to take this apart!!

yesterday we went for a walk to a local wetlands. didn't see as many baby ducks as we thought we would get too but it was lovely

Strawberry Whipped Sensation

Ingredients
4 cups fresh strawberries, divided
1 can (300 mL) sweetened condensed milk
1/4 cup lemon juice
2-1/4 cups thawed Whipped Topping, divided
8 OREO Cookies, finely chopped
1 Tbsp. non-hydrogenated margarine, melted


LINE 8x4-inch loaf pan with foil, with ends of foil extending over sides of pan. Mash 2 cups of the strawberries in large bowl. Add condensed milk, juice and 1 cup of the whipped topping; mix well. Pour into prepared pan.
MIX chopped cookies and margarine. Spoon over whipped topping mixture. Cover with ends of foil and gently press cookie mixture into whipped topping mixture. Freeze 6 hours or until firm.
INVERT dessert onto serving plate when ready to serve; remove pan and foil. Spread remaining 1-1/4 cups whipped topping onto top and sides of dessert. Slice remaining 2 cups strawberries; arrange over dessert. Store leftovers in freezer.

Shortcut Carrot Cake


Ingredients

1 pkg. (2-layer size) spice cake mix
2 cups shredded carrots (about 1/2 lb./225 g)
1 can (14 fl oz/398mL) crushed pineapple, drained
1 cup chopped toasted pecans, divided
2 pkg. (250 g each)Brick Cream Cheese, softened
2 cups icing sugar
3 cups thawed Whipped Topping

Directions
1 PREHEAT oven to 350°F. Prepare cake batter as directed on package; stir in carrots, pineapple and 3/4 cup of the pecans. Pour into two 8-inch square baking pans. Bake 25 to 30 min. or until wooden toothpick inserted in centres comes out clean. Cool 10 min.; remove to wire racks. Cool completely.
2 MEANWHILE, beat cream cheese and sugar with electric mixer or wire whisk until well blended. Stir in whipped topping.
3 PLACE one cake layer on serving plate. Spread with 1-1/2 cups of the cream cheese mixture. Carefully place second cake layer on top of first layer. Frost top and sides of cake with remaining cream cheese mixture. Sprinkle with remaining 1/4 cup pecans. Store in refrigerator.

oh no! i got a card in the mail from the woman who donated this quilt to a charity auction. i quilted one of my quilting pins into it! you can see how huge these suckers are, and they really hurt(as this poor woman has now found out!) i feel horrible :(

Peanut Butter-Chocolate Banana Cream Pie

Ingredients

35 Vanilla Wafers, finely crushed
1/4 cup butter, melted
2 medium bananas, halved lengthwise, quartered
2 squares Semi-Sweet Chocolate, divided
1/2 cup Smooth Peanut Butter
2 cups milk
2 pkg. (4-serving size each) Vanilla Instant Pudding
2 cups thawed Whipped Topping, divided
2 Tbsp. salted peanuts, coarsely chopped

Directions
1 PREHEAT oven to 350ºF. Mix wafer crumbs and butter until well blended; press firmly onto bottom and up side of 9-inch pie plate. Bake 5 to 8 min. or until golden brown. Cool completely; top with bananas.
2 MAKE chocolate curls from 1/2 square of the chocolate; reserve for garnish. Microwave remaining chocolate and the peanut butter on MEDIUM 1 to 2 min.; stir until chocolate is completely melted and mixture is well blended. Drizzle over bananas; set aside. Pour milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 min. or until well blended. Gently stir in 1 cup of the whipped topping. Spread over bananas; top with remaining 1 cup whipped topping.
3 REFRIGERATE at least 3 hours or overnight. Top with chocolate curls and peanuts just before serving. Store leftovers in refrigerator.
